Last week, we asked our Instagram followers to share their favorite recipes from their time at UWEC. The recipes could’ve been inspired by a meal at the Caf or something crafted within the limitations of a dorm room. Check out what made our list of favorite Blugold recipes….

Tortilla Pizzas

A stripped down form of pizza without the thick, filling crust. Spread any kind of sauce and cheese on a plain tortilla shell and warm it in the microwave. You can even fold it like a taco to make consumption cleaner and easier. Pizza is a meal you can never get sick of. Period.

BBQ Ranch Veggie Bowls

Inspired by the all-time favorite Teriyaki Bowls from Sushi-Do!, these easy copycats are the perfect creation and you can even reuse your plastic bowls! Just mix whatever cooked veggies you choose with some rice or quinoa and a dressing like BBQ and ranch. Get experimental! You could keep it vegetarian or add protein of your choice.

Velveeta & Broccoli

Amp your side dish up a notch with some ooey gooey Velveeta on your greens. We are in Wisconsin, so you can never have enough cheese! On the plus side it can make getting your daily dose of veggies a little bit more tolerable..

Pizza Grilled Cheese

What could be better than pizza or grilled cheese? Wait for it….both of them together! Instead of a simple cheese-on-bread sammy, add some marinara and pepperoni to spice things up a bit. Toast it in a pan as you would any other grilled cheese, and you can switch up the toppings whenever you feel like it! We’ve heard pesto can be an interesting option. ;)

Cinnamon Toast Crunch Ice Cream

Our favorite meal….DESSERT. Sprinkle some cinnamon heaven on top of vanilla ice cream or some other daring flavor and enjoy at the end of the day..or middle..or beginning because it’s breakfast, right?!

Anything Bagels

Similar to Everything Bagels, Anything Bagels are meant for whatever is left in your fridge whether that be cream cheese and tomatoes or peanut butter and jelly. If you don’t wanna spend the money at Einstein’s, make them yourself!

Chicken Quesadillas

Simple like it sounds. Tortilla, cheese, chicken, salsa. That’s all you need.

Oatmeal Deluxe

Another outlet of creativity, and a healthier option for on-the-go breakfasts. Add your choice of fruit, supplements, and sweetener. Maple syrup is highly recommended! All you need is a microwave.

PB & Banana Sandwich

A bit of a twist on the classic PB & J and a great option for breakfast. You can also add chia seeds, flax seeds, honey, or chocolate chips to offer more flavor and texture. No cooking or baking necessary!

Microwave Nachos

Sprinkle some cheese on your leftover tortilla chips and pop them in the microwave until they’re all melty. And if you have other toppings like olives, jalapeños, or peppers that give a little kick, then toss them on too!

If you’re joining us on campus for the first time this fall, you too will discover that the food options on campus are endless. In no time, you’ll be getting creative in your own dorm room. We’re not kidding when we say that there’s a million creative ways to use your microwave to whip up something easy and delicious!!
